Super fish seasoning is a blend of spices and herbs that enhances the flavor of fish dishes. It typically contains salt, garlic, onion, paprika, black pepper, lemon peel, parsley, and dill. Super fish seasoning can be used to season fish before frying, baking, grilling, or poaching. It can also be added to sauces, marinades, soups, and stews for a burst of flavor. Super fish seasoning is a versatile and easy way to make any fish dish more delicious and aromatic.

Method of Preparation:

• Sprinkle about 2 teaspoons of Homefoods Super Fish Seasoning per 1 pound of fish over the fillets and then cook as you normally would. You can fry, bake, grill, or poach the fish

• Mix the seasoning with some oil, butter, mayonnaise, or yogurt to make a dip or a sauce for shellfish, such as shrimp, lobster, or crab

• Add the seasoning to soups, stews, chowders, or pies that contain fish or seafood

• Use the seasoning to season fish kebabs, fish cakes, fish tacos, or fish salads

Marinate 1 steak in 2 tablespoons vegetable oil, 1 tablespoon chili powder, then juice of 2 limes, 4 minced garlic cloves, 4 tablespoon spoons of Homefoods Afric grill seasoning, 1 teaspoon salt and 1 sliced onion in the refrigerator, 2 to 4 hours.

Grill on oiled grates over medium-high heat along with the sliced onion, 2 to 5 minutes per side, depending on the thickness, for medium rare.

Let rest 5 minutes; slice on the diagonal

 

METHOD OF PREPARATION

• Place chicken strips into a large, resealable plastic bag. 

• In a small bowl, mix the egg, buttermilk and garlic powder.

• Pour mixture into bag with chicken. 

• Seal, and refrigerate 2-4 hours. 

• In another large, resealable plastic bag, mix together the flour, bread crumbs, salt and baking powder. Remove chicken from refrigerator, and drain, discarding buttermilk mixture. 

• Place chicken in flour mixture bag. 

• Seal, and shake to coat.

• Heat oil in a large, heavy skillet to 375 degrees F (190 degrees C).

• Carefully place coated chicken in hot oil. 

• Fry until golden brown and juices run clear.

• Drain on paper towels.

3. Squeeze a Lemon or sprinkle on it, Homefoods, Lemon, Pepper and Coconut Seasoning and wrap with aluminium foil.
4. Let it marinate in the fridge for up to 24 hours.
5. Cook as desired, oven grill, open BBQ or fry.

Ghana: Growing from a small palm oil exporter into a sizeable food business

Felicia Twumasi established Homefoods in 1995. The idea for a business had been brewing since she was at convent school. Initially, the company focused exclusively on the export of red palm oil, securing substantial market share through a partner in the UK under the Blue Bay label, but today it also produces a range spices and seasonings, sauces and local Ghanaian favourites such as gari. Jeanette Clark spoke to Felicia about putting a supply chain in place, export vs local markets and the grind to grow the company’s customer base.
