Fish Seasoning - Hot

Method of Process:

1. Make 3-4 diagonal cuts in each side of the fish, all the way right through the bone and rub it with 1 tbs of Homefoods Fish Seasoning for a great flavour.
2. Chop parsley, onion, garlic, ginger and tomato and gently flip them back and forth until coated inside and out.
3. Squeeze a Lemon or sprinkle on it, Homefoods, Lemon, Pepper and Coconut Seasoning and wrap with aluminium foil.
4. Let it marinate in the fridge for up to 24 hours.
5. Cook as desired, oven grill, open BBQ or fry.

Waakye Seasoning - 3 Sizes Rice Seasoning - 3 jar sizes

 

Quantity      Ingredients
3000 Grams  Water
 120 grams   Homefoods Waakye Seasoning
 120 Grams   Rice Raw
  80 Grams    Beans


Method of Preparation:

1. Soak Beans for approximately 3hrs/ overnight.
2. Wash beans and cook for 10 minutes.
3. Add 60 grams (3 tablespoonful) of your Homefoods Waakye Seasoning to the cooked beans and stir for uniformity.
4. Wash your rice with warm water and add rice to the beans.
5. Add additional 60 grams (3 tablespoonful) to step 4.
6. Stir for uniformity and cook to desired texture for approximately 10 mins.
7. Add spaghetti, gari foto as accompaniment with your desired meat/fish gravy.
8. Serve it.

Suggested Rice Recipe (4 Persons)

Ready in 15 Minutes


Quantity    Ingredients
900 ML       Boiled Water
500 Grams   Rice
125 ML        Homefoods Vegetable Oil
100 Grams   fresh tomato or 2 tomatoes
100 Grams   Chopped Onion
 35 Grams    Homefoods Jollof Rice Seasoning
 25 Grams    Tomato Puree


Method of Preparation :

1. Mill the fresh tomato and tomato puree together to obtain paste.
2. Pour Oil in to saucepan and add tomato paste.
3. Cook under moderate heat whilst stirring.
4. Fry until oil appears red.
5. Add Kpakpo shito.
6. Add Jollof Rice seasoning and add boiled water immediately.
7. Wash rice with boiled water and add to gravy.
8. Bring rice to boil.
9. As rice gently cooks, add chopped onions.

The Secret:
* Using boiled water reduces time spent in cooking by 20 mins.
* Use chopped onion at the final stage.

1000 Grams   Chopped Chicken
  200 ML       Water
  125 ML       Homefoods Vegetable Oil
  100 Grams   Onion, Homefoods Tomato Paste
      5 Grams  Homefoods Chicken Seasoning

Method of Preparation :

For optimum results,

1. Marinate 1000 Grams Chicken with 5 Grams of Homefoods chicken seasoning overnight or marinate and set aside for ten (10) minutes.
2. Add 200 ML water to steam and cook for five (5) minutes.
3. Add salt to taste.
4. Take steamed chicken out of the stock and fry with 125 ML of homefoods Vegetable Oil till desired brownish state. Set aside.
5. Fry Onions, add Homefoods tomato paste and fresh tomato.
6. Add 2 tablespoons Kpakpo shito / Chilli pepper.
7. Add stock, leave to simmer for 10 minutes and your gravy is ready.
8. Serve with any desired dish.

Ghana: Growing from a small palm oil exporter into a sizeable food business

Felicia Twumasi established Homefoods in 1995. The idea for a business had been brewing since she was at convent school. Initially, the company focused exclusively on the export of red palm oil, securing substantial market share through a partner in the UK under the Blue Bay label, but today it also produces a range spices and seasonings, sauces and local Ghanaian favourites such as gari. Jeanette Clark spoke to Felicia about putting a supply chain in place, export vs local markets and the grind to grow the company’s customer base.
