Beans Stew & Fried Plantain (Red Red)

Ghanaian beans stew normally called red-red is a traditionally dish served with fried plantains. The dish derived it name from the color imparted to it  by the red palm oil and red pepper.

 

Ingredient                                   Quantity
Black Eye Beans                            200 Grams
Homefoods Palm Oil                       125 Grams
Onion Puree                                   30 Grams
Kpakposhito Puree                           20 Grams
Homefoods All Purpose Seasoning      10 Grams
Salt                                                 1 Gram

Optional :
Fresh Tomato Puree                        70 Grams

Ripe Plantain                                1000 Grams
Homefoods All Purpose Seasoning        5 Grams
Homefoods Palm Oil                        125 Grams
Optional :
Homefoods Vegetable Oil               125 Grams

Method of Preparation:
1. Soak Beans for some hours or overnight (in order to reduce cooking time from 30 minutes to 15 minutes)
2. Add enough water to cover the Beans in a Saucepan and cook until tender.
3. Add Onions, Kpakposhito, Homefoods Palm Oil in to the cooked Beans.
4. Add Homefoods All Purpose Seasonings and simmer for 10 minutes.
5. Beans Stew (Red Red ) is ready.
6. Cut ripe Plantain into slices and marinate with Homefoods All Purpose Seasoning.
7. Fry with Homefoods Palm Oil / Homefoods Vegetable Oil.
8. Serve fried Plantains with Beans Stew (Red Red).

Ghana: Growing from a small palm oil exporter into a sizeable food business

Felicia Twumasi established Homefoods in 1995. The idea for a business had been brewing since she was at convent school. Initially, the company focused exclusively on the export of red palm oil, securing substantial market share through a partner in the UK under the Blue Bay label, but today it also produces a range spices and seasonings, sauces and local Ghanaian favourites such as gari. Jeanette Clark spoke to Felicia about putting a supply chain in place, export vs local markets and the grind to grow the company’s customer base.

International Food & Beverages Quality Award

On 30th January, 2017, Homefoods Processing & Cannery Limited was recognized as part of The Global Trade Leaders ́ Club at The International Food & Beverage Quality Awards, which was held in Madrid, Spain. The CEO of Homefoods, Ms Felicia Twumasi received the award on behalf of the company. The award scheme was created to distinguish and stimulate companies belonging to the Food and Beverage sector worldwide.
